Who doesn't love banana bread! This was my grandmother's favorite treat to give out during the holidays and I think my vegan version would do her proud:) Enjoy this melt-in-your-mouth vegan banana bread! Vegan Banana Bread Recipe 🍞🍌 Serving Size: 8-10 slices Prep Time: 15 minutes Cook Time: 60 minutes Total Time: 1 hour 25 minutes Ingredients: ¾ cup / 130 g unsalted vegan butter 350 g ripe bananas (approx. 4 bananas) ¾ cup / 150 g cane sugar (or monkfruit sugar substitute ) 2/3 cup unsweetened applesauce 1 ¾ cups / 220 g plain flour 2 tsp baking powder 1 pinch salt 1 tsp baking soda ⅓ cup / 100 g non-dairy milk 2 tsp pure vanilla extract (or vanilla bean paste ) walnuts , vegan chocolate chips (optional topping) Instructions: Preheat Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper. Cream Butter and Sugar: In a large mixing bowl, beat the vegan butter and cane sugar together until light and fluffy. Add Bananas and Applesauce: Mash the ripe bananas in a separate bowl. Add the mashed bananas and unsweetened applesauce to the butter mixture and mix until well combined. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and baking soda. Mix Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, alternating with the non-dairy milk and vanilla extract. Stir until just combined. Be careful not to overmix. Add Toppings: If desired, fold in walnuts or vegan chocolate chips. Pour into Pan: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
