Hola Veginner Chefs! 🌞 Wondering what to do with that leftover watermelon from my Watermelon Pizza recipe? Well, this is it – a no-waste, tropical delight that's not just a fusion of fresh fruits, but also a testament to our commitment to sustainable living.

Virgin Watermelon Margarita Recipe 🍉


Servings: 4-6 Prep Time: 10 minutes Total Time: 15 minutes


Ingredients:


  • Coconut sugar, to rim glasses

  • 1-2 limes (plus extra, sliced, for garnish)

  • 16 oz ice cubes

  • 32 oz watermelon, cubed

  • 8 oz fresh strawberries, hulled

  • 6 oz lime juice

  • 3 oz agave (adjust to taste)

  • Fresh mint, for garnish


Instructions:


  1. Prep the Glasses: Run a lime wedge around the rim of each glass. Dip the rim into coconut sugar to coat evenly.

  2. Blend: Combine ice, watermelon cubes, strawberries, lime juice, and agave in a blender. Blend until smooth. This is the blender I use to ensure I get the smoothest blend!

  3. Taste and Adjust: If you prefer it sweeter, add a little more agave and blend again.

  4. Serve: Pour into the prepped glasses. Garnish with a slice of lime and some fresh mint.
