Vegan Mango Lassi Recipe 🥭✨

Total Time: 10 minutes
Servings: 2 (makes about 2 cups)
Ingredients:
1/4 cup / 2 oz of unsalted pistachios (or nuts of choice)
2 cups / 16 oz unsweetened non-dairy yogurt of choice (I love Foragers Cashew Yogurt & Kite Kill Almond Yogurt)
1 cup / 8 oz frozen mangos
2 tbsp / 2 oz coconut nectar, agave nectar, or pure maple syrup
1/4 tsp ground cardamom
(optional) non-dairy milk (I love Califia Farms Oat Milk)
Instructions:
In a blender, combine the pistachios, non-dairy yogurt, frozen mango, coconut nectar (or other sweetener), and ground cardamom.
Blend until smooth. If the lassi is too thick, add non-dairy milk gradually until you reach your desired consistency.
Taste and adjust sweetness if needed.
Pour into glasses and enjoy!
