Texas cuisine is often known for its robust and hearty flavors, so adding elements like jalapeƱo and fajita seasoning give this dish a fun Southwestern flair. Packed with crisp, colorful veggies and dressed in a zesty homemade dressing, it's an easy yet impressive side dish for any gathering.


This salad is effortlessly vegan, but its fresh, bold flavors make it a universal crowd-pleaser.

Easy Texas Coleslaw Recipe


  • Servings: 6

  • Prep Time: 10 minutes

  • Total Time: 10 minutes


Ingredients:


  • 2 cups green cabbage, roughly chopped

  • 1 cup red cabbage, roughly chopped

  • 3 medium carrots, peeled

  • 1 large apple, quartered and cored

  • A handful of fresh cilantroĀ (about 1/4 cup), roughly chopped

  • 2 garlic cloves

  • 1 jalapeƱo chili, de-seeded

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 2 tablespoons lime juice

  • 1 tablespoon pure maple syrup

  • 1 tablespoon fajita seasoning

  • A pinch of black pepper

  • 1/4 cup raw pecansĀ (optional), for garnish


Instructions:


  1. Chop Veggies & Apple: Using the grating attachment of your food processor, grate the green cabbage, red cabbage, carrots, and apple. Transfer them to a large salad bowl.

  2. Make the Dressing: Swap to the blade attachment in your food processor. Add the garlic, de-seeded jalapeƱo, olive oil, red wine vinegar, lime juice, maple syrup, fajita seasoning, and black pepper. Process until smooth.

  3. Combine & Toss: Pour the dressing over the grated vegetables and apple in the bowl. Toss everything together to ensure the slaw is evenly coated with the dressing.

  4. Add Cilantro & Pecans: Stir in the chopped cilantro and sprinkle with chopped pecans if using. This adds a lovely fresh flavor and a nice crunch.

  5. Chill & Serve: Allow the coleslaw to chill in the refrigerator for at least 30 minutes before serving. This helps the flavors to meld together and intensify.



Tips: You can make your own fajita seasoning by combining some chili powder, oregano, cumin, garlic powder, cayenne and black pepper. Use gloves when deseeding jalapeƱo chilis so you don't get hot pepper hands LOL.


If you're not familiar with hot pepper hands, also known as chili burn... this happens because jalapeƱos, like other chili peppers, contain capsaicin, a chemical that can cause a burning sensation on any skin it touches. Here are a few more tips to avoid this:


  1. Wear Gloves: The easiest way to prevent chili burn is to wear gloves while handling jalapeƱos or any hot peppers. Disposable gloves work great for this.

  2. Wash Hands Thoroughly: If you donā€™t have gloves, make sure to wash your hands thoroughly with soap and warm water immediately after handling the peppers. Avoid touching your eyes, nose, or mouth until you've washed your hands, as these areas are particularly sensitive to capsaicin.

  3. Use Oil or Alcohol: Capsaicin is not very soluble in water but dissolves well in fats, oils, and alcohol. Rubbing your hands with cooking oil and then washing with soap and water can help remove the capsaicin. Some people use rubbing alcohol first, then wash with soap and water.

  4. Lime or Lemon Juice: Citrus juice can help neutralize the burn. Rubbing a slice of lime or lemon over your hands before washing them might also reduce irritation.
