Some people like adding chia seeds or yogurt to thicken their oats, but today, we’re doing something even more exciting. We’ll be soaking our oats in homemade strawberry cinnamon milk and adding layers of graham cracker crumbs for a shortcake-inspired twist. Trust me, it’s like having dessert for breakfast, but totally guilt-free! 🍰


Why Use Graham Crackers?


I used graham crackers in this recipe as a playful and convenient alternative to mimic the flavor and texture of a crust or biscuit layer. The graham crackers give a satisfying crunch and that “shortcake” feel, but in a no-bake, breakfast-friendly way. So, while it’s not the traditional way to make strawberry shortcake, using graham crackers is a delicious, creative option that works well in this context! If you ever want to go even more authentic, you could experiment with crumbling some vegan shortbread cookies or biscuits as another alternative. 😋

Instructions:


  1. In a blender, combine the sliced strawberries, plant milk, maple syrup, vanilla, and cinnamon. Blend until smooth and well-combined. No need to heat anything—this keeps the recipe simple and lets the ingredients shine! 🍓

  2. Using glass jars with airtight lids, add the rolled oats and a pinch of salt. Pour the strawberry cinnamon milk over the oats and stir well.

  3. Optionally, add a few strawberry slices and half of the crushed graham crackers as a layer over the oats to add a lovely texture.

  4. Cover and refrigerate overnight, allowing the oats to soak up all that delicious strawberry milk.

  5. In the morning, skip stirring to keep that graham cracker layer intact. Top with a dollop of coconut yogurt or coconut whipped cream and sprinkle the remaining crushed graham cracker crumbs on top for extra crunch. Garnish with fresh strawberry slices, and fresh mint leaves if you’re feeling extra fancy. 🌱

  1. Use Rolled Oats: Quick oats can become mushy, and steel-cut oats won't soften enough overnight. Rolled oats are perfect for achieving that creamy texture.


  2. Sweeten to Taste: Maple syrup is my go-to for natural sweetness, but feel free to use agave nectar or even a mashed banana for a healthier twist.


  3. Experiment with Flavors: If strawberry shortcake isn’t your thing, you can use this same method to make blueberry pie or mango coconut overnight oats. The possibilities are endless!


  4. Meal Prep-Friendly: Overnight oats keep well in the fridge for up to 3 days, making them a fantastic meal prep option. Just be sure to wait to add your toppings until right before serving to keep them fresh and crunchy.
