Raw Spiced Carrot Salad Recipe

Ingredients:
3-4 large carrots, peeled (about 3 cups grated)
1 large apple, cored (about 1 cup grated)
Ā¼ cup raisins
1 tablespoon lemon juice
1 garlic clove
Ā½ teaspoon ground paprika
Ā½ teaspoon ground cinnamon
A pinch of ground cayenne pepper
2 teaspoons extra virgin olive oil
Ā¼ cup fresh cilantro, roughly chopped
A pinch of freshly ground black pepper
Ā¼ cup pistachio nutsĀ (optional), roughly chopped
Instructions:
Chop Everything: Place the carrots, apple, and garlic clove into your food chopper or food processor. Pulse a few times until everything is finely chopped but not pureed.
Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, paprika, cinnamon, cayenne pepper, and black pepper.
Combine & Serve: Transfer the chopped ingredients to a large bowl, add the raisins, pistachios (if using), and cilantro. Pour the dressing over the salad and toss well to combine.
Ready to Enjoy: Serve immediately or let it sit in the refrigerator for about 30 minutes if you prefer the flavors to meld together a bit more.
