Vegan Sausage & Egg Sandwich Recipe
Servings: 2-4 Servings
Prep Time: 10 minutes
Cook Time: 10-15 minutes
Total Time: 20-25 minutes
Ingredients:
2 vegan cheddar slices (optional)
1 avocado (optional)
2 spring onions (optional)
ground black pepper
Instructions:
Cook Sausage: In a skillet over medium heat, cook the Beyond Breakfast Sausage patties according to package instructions until browned and heated through, about 5-7 minutes. Remove from the skillet and set aside.
Cook Just Egg: In the same skillet, add the Just Egg folded patties and cook until warmed through and slightly crispy on the edges, about 2-3 minutes per side.
Toast Muffins/Buns: While the sausage and egg are cooking, split the English muffins or Pretzilla buns and toast them until golden brown.
Assemble Sandwich: On the bottom half of each toasted muffin or bun, layer a sausage patty, a Just Egg folded patty, and a slice of vegan cheddar (if using).
Add Toppings: Top with avocado slices and chopped spring onions, and season with ground black pepper to taste.
Serve: Place the top half of the muffin or bun on the sandwich and serve immediately.
Tip: Some brands of english muffins are not vegan so make sure you read the ingredients!
