Apple Lime Vinaigrette Recipe
Servings: 4 servings (enough for a salad with mixed greens)
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Ingredients:
2 cups / 2 oz mixed greens
toppings of choice (cucumber, avocado, cherry tomatoes, dried cranberries, raw sliced almonds, golden flax seeds)
⅓ cup apple slices / 2.5 oz apple slices or unsweetened apple sauce
¼ cup / 2 oz onion (optional)
¼ cup / 2 oz extra virgin olive oil
1 tbsp / ½ oz fresh ginger, peeled
2 tbsp / 1 oz fresh lime juice
1 tbsp / ½ oz pure maple syrup
Instructions:
Prepare Ingredients: If using apple slices, chop them into smaller pieces. If using applesauce, set aside.
Blend Vinaigrette: In a blender, combine 2 oz of apple slices (or applesauce), 2 oz of onion (if using), 2 oz of extra virgin olive oil, ½ oz of fresh ginger, 1 oz of fresh lime juice, and ½ oz of pure maple syrup. Blend until smooth.
Assemble Salad: In a large bowl, combine 2 oz of mixed greens and your choice of toppings (cucumber, avocado, cherry tomatoes, dried cranberries, raw sliced almonds, or golden flax seeds).
Dress the Salad: Drizzle the vinaigrette over the salad and toss gently to combine.
Serve: Serve immediately and enjoy!
