This easy no-bake vegan snack recipe is surprisingly filling and oh-so-satisfying! If you love mint and you love chocolate, you will devour these! Make a big batch, freeze, and grab on the go as needed!

Mint Chocolate Protein Bars Recipe
Servings: 10-14 bars
Prep Time: 10 minutes
Chill Time: 4 hours
Total Time: 4 hours 10 minutes
Ingredients:
⅓ cup / 75 g non-dairy milk
½ cup / 125 g nut butter
⅓ cup / 100 g pure maple syrup
1 ⅓ / 135 g rolled oats
2 ½ / 75 g puffed rice cereal
¼ cup / 25 g cocoa powder, unsweetened
¼ cup / 20 g protein powder
10 drops peppermint extract
½ cup / 90 g dark chocolate chips
Instructions:
Mix Ingredients: In a large mixing bowl, combine the non-dairy milk, nut butter, and pure maple syrup. Stir until well blended.
Add Dry Ingredients: Add the rolled oats, puffed rice cereal, cocoa powder, protein powder, and peppermint extract to the bowl. Mix until all ingredients are evenly incorporated.
Prepare the Pan: Line an 8x8 inch pan with parchment paper. Press the mixture firmly into the pan in an even layer.
Melt Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
Top with Chocolate: Pour the melted chocolate over the pressed mixture in the pan, spreading it evenly.
Chill: Place the baking dish in the refrigerator and chill for at least 4 hours, or until firm.
Cut and Serve: Once set, lift the bars out of the pan using the parchment paper. Cut into 10-14 bars and enjoy!
