Peanut Protein Balls Recipe
Servings: 12-15 balls
Prep Time: 10 minutes
Chill Time: 30 minutes
Total Time: 40 minutes
Ingredients:
1 cup / 3.5 oz roasted unsalted peanuts
Ā½ tsp pure vanilla extract
2 Tbsp pure maple syrup
1 oz rolled oats or protein powder
3 oz raw peanut butter
1/8 tsp cinnamon
ā cup / 1 oz vegan semi-sweet or dark chocolate chips (optional)
ā cup / 1 oz granola (or) brown rice cacao crisps (optional)
Instructions:
Blend Peanuts:Ā In a food processor, pulse the roasted peanuts until finely chopped.
Mix Ingredients:Ā Add the vanilla extract, maple syrup, oats or protein powder, peanut butter, and cinnamon to the processor. Blend until well combined and sticky.
Add Mix-ins:Ā If using, stir in the chocolate chips and granola or cacao crisps.
Form Balls:Ā Scoop out tablespoon-sized portions and roll them into balls using your hands.
Chill:Ā Place the balls on a baking sheet and chill in the refrigerator for about 30 minutes to firm up.
Enjoy:Ā Store in an airtight container in the fridge for up to a week.
