Vegan Pesto Pizza Recipe š

Cook Time: 15-20 minutes
Total Time: 35-50 minutes
Ingredients:
Homemade Pizza Dough:
Optional: skip this step & use store-bought dough or pre-made crust.
2 garlic cloves
Ā¼ cup / 2 oz extra virgin olive oil
3 Ā½ cups / 14 oz bread flour
1 cup water
1 tsp sugar
2 tsp dried instant yeast
Ā¼ cup / 1 oz garlic olive oil
1 tsp salt
By hand, mix water, sugar and dried instant yeast. Add bread flour, garlic olive oil, and salt and let my robot chef knead for 2 min, or knead by hand until dough forms. Place dough into a large bowl greased with olive oil spray and set aside. Cover bowl with lid or cling wrap and let dough rise until doubled in size (approx. 1hr).
Vegan Pesto Sauce:
Optional: skip this step & use 'Gotham Greens Vegan Pesto' or swap with my marinara sauce.
1 Ā½ cups / 3 oz fresh basil leaves
ā cup / 1 oz pine nuts
1 tbsp nutritional yeast
1 garlic clove
Ā¾ cup / 5 Ā½ oz extra virgin olive oil
Ā¼ cup / 2 oz firm tofu, drained
Place basil, pine nuts, nutritional yeast, garlic, olive oil, & tofu into a food processor and blend 20 sec.
Instructions:
Make the Pesto:Ā In a food processor, combine the basil leaves, pine nuts, nutritional yeast, garlic, and drained tofu. Pulse until finely chopped. Slowly add the olive oil while blending until smooth. Set aside.
Activate Yeast:Ā In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
Mix Dough:Ā In a large mixing bowl, combine bread flour and salt. Add the minced garlic, activated yeast mixture, and Ā¼ cup of olive oil. Mix until a dough forms.
Knead:Ā Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Let It Rise:Ā Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat Oven:Ā Preheat your oven to 475Ā°F (245Ā°C).
Shape the Dough:Ā Once risen, punch down the dough and turn it out onto a floured surface. Roll it out to your desired thickness.
Add Toppings:Ā Brush the pizza dough with garlic olive oil, then spread a layer of vegan pesto on top. Add your favorite vegan toppings.
Bake:Ā Transfer the pizza to a baking sheet or pizza stone and bake for 15-20 minutes, or until the crust is golden and crispy.
Serve:Ā Slice and enjoy your delicious vegan pizza with homemade pesto!
