Chocolate Pistachio Bars Recipe

Ingredients:
Crust:
1 ½ / 4 oz quick oats
1 cup / 4 oz raw unsalted almonds
¼ / 3 oz maple syrup
2 tbsp / 1 oz coconut oil
¼ tsp vanilla bean paste (or extract)
Filling:
1 cup / 8 oz pistachio nuts, shelled
1 tbsp / 1 oz pure maple syrup
Chocolate Topping:
½ cup / 3 ½ oz dark chocolate chips, vegan
¼ cup / 2 oz unsweetened cocoa powder
¼ cup / 2 oz coconut oil
Instructions:
Crust: Preheat oven to 350°F (175°C).Blend oats and almonds in a food processor until finely ground. Add maple syrup, coconut oil, and vanilla; pulse until combined. Press into an 8x8 inch pan.
Filling: Blend pistachios in the food processor until fine. Add maple syrup and blend until smooth. Spread over the cooled crust.
Chocolate Topping: Melt dark chocolate chips and coconut oil in a saucepan over low heat. Stir in cocoa powder until smooth. Pour over the pistachio filling and spread evenly.
Chill: Refrigerate for at least 1 hour until set. Cut into bars and enjoy!
