Ingredients:

  • đŸ„‘ Mashed Avocado: Ready-made or homemade, the choice is yours. I love using Trader's Joe's Chunky Guac for convenience!

  • 🍅 Cherry Tomatoes: Fresh and juicy, they add a burst of color and sweetness.

  • 🍄 Crispy Mushroom Bacon: The star of the show! Stay tuned for my next video where I’ll show you how to make this from scratch.

  • đŸŒ¶ïž Chili Flakes: For that extra kick! Adjust to your spice level.

  • đŸ«’ Garlic Infused Olive Oil: Just a drizzle is all you need.

  • 🍋 Lemon Juice: Elevate the flavors with a fresh, tangy finish.

  • 🍞 Bread: Use your favorite type, but make sure it’s toasted to perfection.

Tip: I always recommend sprouted bread over regular bread because it’s easier to digest, lower in carbs, and higher in protein & fiber. Sprouted grain bread is also lower in gluten, and has a lower glycemic index compared to regular bread. Enjoy it guilt free! Freeze right away for optimal freshness, and toast slices as needed.

Instructions:

Prep Time: 5 minutes

Servings: 2 toasts

  1. Toast the Bread: Start by toasting your favorite bread slices until they’re golden and crispy. This will give your avocado toast a nice crunch.

  2. Spread the Guac: Generously spread mashed avocado or chunky guacamole over the toasted bread. Make sure to cover every inch!

  3. Drizzle & Squeeze: Drizzle a bit of olive oil over the guac, and squeeze some fresh lemon juice on top. This adds a zesty kick that complements the creamy avocado.

  4. Add a Touch of Heat: Sprinkle chili flakes to your liking. If you’re not into spice, you can skip this step or add a milder seasoning like smoked paprika.

  5. Top with Tomatoes: Slice the cherry tomatoes and arrange them on top of the guac. The sweetness of the tomatoes pairs perfectly with the other flavors.

  6. Crown with Mushroom Bacon: Finally, top your toast with crispy mushroom bacon. This plant-based alternative to traditional bacon adds a savory crunch that’s simply irresistible.

  7. Serve & Enjoy: Serve immediately and enjoy your delicious, loaded avocado toast!

loaded avocado toast

One of the best things about avocado toast is that you have so much creative control in the kitchen. You can load your toast with whatever you have handy! For example, sometimes I like to switch things up by using fresh avocado slices instead of guac, and then top it with slivers of carrots, sliced almonds, a sprinkle of hemp seeds or sesame seeds, and a dash of black pepper. I’ll drizzle some apple cider vinegar or red wine vinegar and lemon juice over it for a tangy kick. Chia seeds or roasted flax seeds are other great options if you’re out of hemp seeds. The possibilities are endless!
