I've taken the beloved flavors of traditional s'mores and transformed them into a mouthwatering vegan dessert that will leave you craving s'more. Say hello to my GIANT S'more Cookie! This delectable dessert combines the irresistible combination of graham crackers, gooey marshmallows, and rich chocolate—all in a giant cookie. Giant S'more Cookie Recipe

  1. Preparing the Crust: Start by preheating your oven to 350°F (175°C) and greasing a springform pan. In a bowl, combine the graham cracker crumbs, melted vegan butter, maple syrup, & coconut sugar. Mix until the ingredients are well combined and the mixture resembles a crumbly texture.


  2. Pressing the Crust: Transfer the crust mixture to your pan. Use your hands or the back of a spoon to press it down firmly and evenly, creating a solid crust layer. Ensure the crust reaches all edges of the dish.


  3. Baking the Crust: Place your springform pan on top of a flat pan so it's easy to hold and remove from the oven. Bake the crust for approximately 8-10 minutes. Remove from the oven and let cool slightly.


  4. Layering the Goodness: Sprinkle a generous layer of vegan chocolate chips evenly over the crust. Next, add a layer of vegan marshmallows on top of the chocolate chips, ensuring they cover the entire surface.


  5. Toasting to Perfection: Return to the oven and bake for another 8-10 minutes, or until the marshmallows turn golden brown and start to get delightfully gooey. Broil the last 2 minutes if needed. Keep a close eye on them to prevent burning.


  6. Final Touches: Once your cookie is perfectly golden and toasty, remove from oven and let cool completely. This step requires a little patience, but trust me—it's worth the wait! Once cooled, get ready to dive into s'more bliss! Refrigerate and cut into individual servings, or just take a big bite out of your big a** cookie! No judgement;)
