Soft Walnut Date Cake Recipe

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 70 minutes


Ingredients:



Instructions:


  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a cake pan or line it with parchment paper.


  2. Prepare Walnuts: In a food processor, pulse the raw walnuts until they are finely chopped but not ground into flour.


  3. Blend Dates: In the same food processor, combine the pitted dates and water. Blend until smooth.


  4. Mix Ingredients: In a large mixing bowl, combine the spelt flour, monkfruit sugar substitute, baking powder, baking soda, and ground cinnamon. Stir in the chopped walnuts.


  5. Combine Wet Ingredients: In a separate bowl, mix the blended date mixture, unsweetened applesauce, vegan butter, vanilla bean paste (or extract), and maple syrup.


  6. Combine Wet and Dry: Pour the wet mixture into the dry ingredients and mix until just combined.


  7. Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.


  8. Cool and Serve: Allow the cake to cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and serve!
