Coconut Papaya Popsicles Recipe
Servings: Makes about 8 popsicles
Prep Time: 10 minutes
Cook Time: None (but requires about 4-6 hours freezing time)
Total Time: About 4 hours 10 minutes (mostly freezing time)
Ingredients:
2 cups ripe papaya, peeled and seeded
1 cup coconut milk (full-fat for creamier popsicles)
1/4 cup maple syrup or agave syrup (adjust to taste)
Juice of 1 lime
A pinch of salt
Instructions:
Blend Ingredients: In a blender, combine the papaya, coconut milk, syrup, lime juice, and a pinch of salt. Blend until smooth. For the smoothest blend, I use this blender.
Taste Test: Give the mixture a taste and adjust the sweetness or lime juice according to your preference.
Pour and Freeze: Pour the mixture into popsicle molds. If you like, you can add small chunks of papaya or shredded coconut to the molds for texture. Here is the mold I like to use for my popsicles!
Insert Sticks and Freeze: Insert popsicle sticks and freeze for at least 4 hours, or until solid.
Enjoy: Once frozen, run the mold under warm water for a few seconds to help release the popsicles. Then grab a popsicle and enjoy the creamy, tropical delight!
