Hey Veginners! Cherry season is in full swing, and it's got me reminiscing about those classic peanut butter and jelly days. But, why not give that old-school favorite a fresh twist? Enter: Roasted Cherry Almond Butter Toast.
It's like the grown-up, chic cousin of the PB&J. Healthier, a tad fancy, and oh-so-perfect for this time of the year. It feels just right to shake things up a bit and indulge in a treat that's both modern and reminiscent of simpler times.

Roasted Cherry Almond Butter Toast Recipe
Cook Time: 10 minutes
Prep Time: 5 minutes
Servings: 2
Ingredients:
1 cup of fresh cherries, pitted and halved
2 slices of your favorite whole grain bread
4 tablespoons of almond butter
1 teaspoon of olive oil
A pinch of sea salt
Optional: hemp seeds
Instructions:
Preheat your oven to 400Ā°F (200Ā°C). While it's heating up, pit and halve your cherries. Toss them in a bowl with the olive oil and sea salt.
Spread the cherries out on a baking sheet and roast for about 10 minutes or until they're soft and juicy.
While the cherries are roasting, toast your bread and spread 2 tablespoons of almond butter on each slice.
Once the cherries are done, distribute them evenly on top of your almond butter toast. Sprinkle with chia seeds or crushed almonds if you'd like a little extra texture and nutrition.

Air Fryer Method:
You can also roast the cherries in your air fryer! To do so, preheat your air fryer to 375Ā°F (190Ā°C). Arrange the oiled and salted cherries in a single layer in the air fryer basket. Cook them for about 6-8 minutes or until they're soft and juicy, giving the basket a little shake halfway through to ensure even roasting. Remember, air fryers can vary in their cooking times, so keep a close eye on your cherries to prevent them from overcooking. This is the air fryer I use and love.
