Servings: 4
Prep Time: 10 minutes
Cook Time:Ā 20 minutes
Total Time: 30 minutes
Ingredients:
5 oz onions
2 garlic cloves
2 cm piece fresh ginger, peeled
2 carrots
1 green bell pepper
2 fresh green chilies, de-seeded
1 oz olive oil
1 tsp paprika
1 tbsp curry powder
1 ripe tomato, cut into pieces (3 cm)
2 pinches ground black pepper
15 oz can of baked beans (with sauce)
optional sides: bread or rice
Instructions:
Prepare the Vegetables: Finely chop the onions, garlic, ginger, green bell pepper, and green chilies. Grate the carrots and cut the ripe tomato into pieces.
SautƩ the Aromatics: In a large pan, heat the olive oil over medium heat. Add the chopped onions, garlic, and ginger, and sautƩ until the onions are soft and translucent, about 3-4 minutes.
Cook the Vegetables: Add the diced green bell pepper, chilies, and grated carrots to the pan. Stir and cook for another 5 minutes, until the vegetables are softened.
Add Spices and Tomato: Stir in the tomato paste, paprika, and curry powder. Cook for 2 minutes, allowing the spices to blend well with the vegetables. Add the chopped tomato pieces and ground black pepper, and cook for another 3 minutes.
Incorporate the Baked Beans: Pour in the can of baked beans with its sauce. Stir to combine everything, and let the mixture simmer for 5 minutes, allowing the flavors to meld together.
Serve: Once cooked, remove the pan from the heat. Serve your chakalaka warm with bread or rice on the side for a complete meal.
