My easy, healthy recipe combines the natural sweetness of carrots and apples with a hint of exotic spices like cinnamon and cayenne pepper, topped with crunchy pistachios and fresh cilantro. Perfect for a quick lunch or a festive side dish. šŸŽšŸŒæ

Raw Spiced Carrot Salad Recipe

  1. Chop Everything: Place the carrots, apple, and garlic clove into your food chopper or food processor. Pulse a few times until everything is finely chopped but not pureed.

  2. Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, paprika, cinnamon, cayenne pepper, and black pepper.

  3. Combine & Serve: Transfer the chopped ingredients to a large bowl, add the raisins, pistachios (if using), and cilantro. Pour the dressing over the salad and toss well to combine.

  4. Ready to Enjoy: Serve immediately or let it sit in the refrigerator for about 30 minutes if you prefer the flavors to meld together a bit more.
