Vegan BLT Sandwich Recipe šš
Prep Time:Ā 10 minutes
Cook Time:Ā 10 minutes (for tempeh)
Total Time:Ā 20 minutes
Servings:Ā 2 sandwiches
Ingredients:
1 ripe avocado
1 large tomato, sliced
Fresh spinachĀ (or your favorite salad greens)
Black pepper, to taste
Vegan mayoĀ (optional)
Instructions:
If your smoky tempeh strips are not pre-cooked, sautƩ them in a skillet over medium heat with a drizzle of garlic-infused olive oil until crispy and golden, about 5-7 minutes. Set aside.
Lightly toast the sprouted bread until golden brown. You can brush it with a little garlic-infused olive oil for extra flavor.
In a bowl, mash the avocado with a fork, adding a pinch of black pepper. If you like, you can also mix in a bit of garlic-infused olive oil for added flavor.
Spread a layer of mashed avocado on one slice of toasted bread. Layer on the smoky tempeh strips, followed by the tomato slices and a handful of fresh spinach. If using, spread a thin layer of vegan mayo on the other slice of bread, then place it on top to complete the sandwich.
Sprinkle additional black pepper over the top if desired. Cut the sandwich in half and serve immediately. Enjoy your Vegan BLT Sandwich!
Tip: I always recommend sprouted bread over regular bread because itās easier to digest, lower in carbs, and higher in protein & fiber. Sprouted grain bread is also lower in gluten, and has a lower glycemic index compared to regular bread. Enjoy it guilt free! Freeze right away for optimal freshness, and toast slices as needed.
