Chewy Cinnamon Apple Bars Recipe 🍎
Serving Size: 1 bar (makes about 12 bars)
Prep Time: 15 minutes
Cook Time: 25-30 minutes
Total Time: 40-45 minutes
Ingredients:
1 cup / 8 oz apples (cored, stemmed, diced)
5 tbsp / 3 oz vegan butter
1/2 cup / 4 oz of pure maple syrup or coconut nectar
1/3 cup / 3 oz raw peanut butter or nut butter of choice
1/3 cup / 3 oz raisins
1/3 cup / 3 oz dried cranberries
1 tbsp / 1/2 oz coconut sugar
2 tbsp / 1 oz whole grain spelt flour
2 tbsp / 1 oz raw chopped pecans or pumpkin seeds
2 tbsp / 1 oz raw sunflower seeds
1 tsp vanilla bean paste or vanilla extract
1 tsp of cinnamon
1/8 tsp nutmeg
2 cups / 6 oz rolled oats
1 cup / 1 oz brown rice cacao crisps or other rice cereal
Instructions:
Preheat oven to 350°F. Line a square baking dish (9 in. x 9 in.) with parchment paper and set aside.
In my robot chef or a food chopper, add 8 oz of diced apples and chop. If not using my robot chef transfer to stove & sauté apples for 10min with 1 oz of vegan butter. Add remaining vegan butter, pure maple syrup, peanut butter, raisins, cranberries, coconut sugar, spelt flour, sunflower seeds, chopped pecans, vanilla bean, cinnamon, and nutmeg, then cook for 4min.
Add rolled oats & rice cereal and mix until combined. Transfer mixture into prepared baking dish and press firmly and evenly. Bake for approx. 25-30 minutes or until golden brown.
Let cool for 10min, and then cut into 8-10 bars. Leftover bars should be stored in a glass container in the fridge and can be served cold or warm. Enjoy your apple bars!
